Las proteínas llamadas lectinas tienen la capacidad de unirse a moléculas específicas de carbohidratos. Los científicos creen que las lectinas son parte de los mecanismos de protección de posibles agresiones de una planta. 

En las plantas, las lectinas se concentran en las semillas, y algo en las hojas y raíces, aunque en menor medida.

Los tipos de lectinas que a menudo se encuentran en los alimentos y pueden producir sensibilidad incluyen. 

  • Lectinas de leguminosas,como judías blancas. Más o menos el 15% por ciento de las proteínas de una judía son lectinas.
  • Lectinas de cucurbitáceas, que se encuentran en la savia o zumo de pepino, melón y calabaza.
  • Las prolaminas, como el gluten (aunque en realidad es la gliadina), son lectinas solubles en alcohol que se encuentran en los cereales.
  • La aglutinina o hemaglutinina se conoce como la aglutinación de la sangre (aglutinación de células sanguíneas). Los ejemplos incluyen aglutininas de germen de trigo y de soja.
